CHAMPAGNE COCKTAIL
— A large lemonade glass half filled with shaved ice, 2 drops each orange, lemon and gentian essences; i tablespoon each orange-flower
water and syrup; well shaken; i glass champagne added.
Champagne Cocktail
(One bottle of wine to every six large glasses.) (
Per glass.)
j- teaspoonful of sugar.
1 or 2 dashes of bitters.
1 piece of lemon peel.
Fill tumbler one-third full of broken ice, and fill balance
with wine. Shake well and serve.
CHAMPAGNE CUP
— 1 bottle champagne, i liqueur glass curacao, same of pale brandy, sprig of verbena, slice of cucumber, ice, 2 bottles soda.
The drink called the 'cooler' is prepared by half- filling two big glasses with cracked ice, putting in a little mint and two lumps of sugar,
pour half a pint of champagne on top, and squeezing the mint with a crusher or mixer until its essence pervades the champagne.
APPLE CHAMPAGNE — Flavor said to be like champagne; made of 2 pounds apples, baked and mashed with i gallon boiling water, ^t
pound sugar added and yeast when cool; allow to ferment 24 hours, strained through flannel, bottled and corks tied or wired
Regent's Punch

1£ pint, each, strong hot green tea, lemon juice, and
capillaire.*
1 pint, each, rum, brandy, arrack, and Cura9oa.
1 bottle of champagne ; mix, and slice a pine-apple into it
Rocky Mountain Punch.
(For a mixed party of twenty.) (

This delicious punch is compounded as follows :
5 bottles of champagne.
1 quart of Jamaica rum.
1 pint of maraschino.
6 lemons, sliced.
Sugar to taste.
Mix the above ingredients in a large punch-bowl, then
place in the centre of the bowl a large square block of ice,
ornamented on top with rock candy, loaf-sugar, sliced
lemons or oranges, and fruits in season. This is a splendid
punch for New Year's Day.
Light Guard Punch
(For a party of twenty.)
3 bottles of champagne.
1 do. pale sherry.
1 do. Cognac.
1 do. Sauterne.
1 pineapple, sliced.
4 lemons, do
Sweeten to taste, mix in a punch-bowl, cool with a large
lump of ice, and serve immediately.
Champagne Cobbler
(One bottle of wine to four large bar glasses of champagne.)
1 table-spoonful of sugar
1 piece each of orange and lemon peel.
Fill the tumbler one-third full with shaved ice, and fill
balance with wine, ornament in a tasty manner with berries
in season. This beverage should be sipped through
a straw
Champagne Cobbler

Dissolve one lump sugar in a long thin glass
with a little water, add a piece of lemon-peel, a
slice of orange, a few lumps ice, then fill with
champagne; stir. Sip with straws.
Claret Cobbler.
Champagne Cocktail
Put 1 lump of sugar, 1 or 2 dashes Angostura
bitters, and 1 small lump of ice in each goblet;
then fill with wine, stir, and serve with a thin
piece of twisted lemon peel. Allow 1 pint of
wine to every 3 goblets.
